Ring in 2017 with a Roast!

For the first time in years, Brian and I decided to stay in on New Year’s Eve with Lizzie Bear. Sometimes you just have to find your center, you know? So I decided to cook up a feast with a Prime Rib Roast as the main. I even made a menu because, why not? haha Everything came out so good!

This is my first roast so I was extra nervous. Of course, sometime during the day, I realized that the new thermometer I bought was broken LOL ANXIETY ATTACK! Luckily, after tenting for 20 minutes, I cut the first slice off the roast and it was perfectly pink. Clearly, I made too much food – the good thing is, prime rib makes for delicious leftovers!
