Salted-Butter Rose Apple Pie!

This pie is what happens when I’m trapped in my own apartment for a whole weekend. First of all, I had plans. Except according to the weather channel, the news, & the entire universe, it was supposed to be insanely rainy & windy all weekend so I decided to stay in & make that Netflix subscription work extra hard.

Peach Refrigerator Cake

Man I hate making dessert.

Well, let me rephrase that, I don’t like to cook when it involves precise measurements. I like to eyeball. A lot. And usually when it comes to desserts, it involves measuring cups and spoons and a whole lot of accuracy because it’s pretty much a chemical solution and I hate chemistry.

That’s why this recipe is perfect: minimal measurements & no baking. Have you ever made one of these? I used to make this a lot with my sister and aunts in the Philippines. I don’t know why or how it got popular but I do know that if you ask a Filipino what a “Refrigerator Cake” is, chances are, they’d know it involves peaches.

It’s easy to prepare, it’s delicious, & oh so pretty! Recipe below:

Sockeye Salmon with Dill & Lemon.

I usually base my week’s dinner menu on what’s in season. I mean, it only makes sense.

If it’s in season, it’s in abundance; if it’s in abundance, it’s usually cheaper; if it’s cheaper, I’m happier.

I love Fresh Direct because they have Seasonal Sales (dubbed President’s Picks). A couple of weeks ago, their Wild Alaskan Sockeye Salmon was on sale so of course, I picked up a couple of fillets. I mean, look at it! How can you resist that bright red hue?!

Recipe after the jump.

Meredith James: Land Lock, Club Sandwiches, & Why I Use Fresh Direct.

20140416-151202.jpg

Thought it was apropos to wear my Miss Marc flats to the Meredith James Exhibit. In other news, one lazy Sunday morning, as I was flipping through the channels, I came upon The Pioneer Woman’s show on The Food Network. I always loved her food blog – for some crazy reason, every time I Google a recipe, hers is always at the top of the search results! She happened to be making club sandwiches that day on her show and I thought, “Do people really need a recipe for this?!” I mean, I get it – the mayo has pesto and her chips are home made but still, it’s a sandwich. That’s like if I had a cooking show and I shared my recipe for nachos. Do people really not know how to make nachos? Don’t answer that.
